Unlike wine, Scotch ages only in the barrel. Once bottled its character is set.

Smoky malts do not necessarily come from peaty water but from the process of using peat to toast the barley the Scotch was made with.

Some 80% of casks in Scotland first contained Bourbon which confers vanilla and maple notes on the Scotch.

 

Ardmore – Smoky-peaty nose and sweet. Peat spice and sweet on the palate with an unexpected, exciting ginger vanilla finish.

Auchentoshan – Light, medium-sweet, almost no peat. Fruity, floral, malty notes and nutty hints.

Dewa’s Aberfeldy – Honey. Though light and sweet, this Scotch has depth. Floral honey nose with a hint of lemon and vanilla on the palate. Nice finish.

Dewar’s Signature NEW! – Softly frangrant with toasted marshmallow and chocolate on the nose. Full-bodied with vanilla and toffee. Peaty and nutty.

Glenmorangie 12yr Sherry Cask – Lasanta is full-bodied and rich in texture with a wonderfully long and smooth finish.

Glenmorangie 12yr in Sauternes Casks – Toasted oak and vanilla are intricately woven with lemon and honey and white chocolate. Silky and sumptuous.

Oban – Elegant and glowing, it marries the sea air character of the island malts to the soft, richly fruity style of the Highlands, creating its own rich tasting West Highland malt.

Old Pulteney – 12yr – Deep amber in appearance, red and golden with a slight pink hue. Nose: Medium to high intensity and complexity. dry with a hint of sea-air. Palate: Dry, medium bodied and smooth with a clean finish; faintly salty with a slightn sherry note.

Old Pulteney – 17yr – Red amber appearance with a rich autumnal hue. The nose is sweet with traces of apples and pears; slightly woody with a hint of butterscotch. Palate: full bodied, with hints of vanilla and floral notes in the background; a lonk lasting memorable finish.

Speyburn Highland – Fresh and clean on the nose, aromatic with a rich lemony fruitiness. On the palate a pleasant honey bouquet, medium bodied with a delicate fruity character and a warm peaty finish.

Speyburn Bradan Orach – On the nose reveals green apples, honey, lemon and floral vanilla spices. On the palate, Bradan Orach is wonderfully balanced and full-bodied with a long-lasting finish.

The Balvenie – Doublewood – Many years of maturation exclusively in traditional whisky oak casks mellows the maturing spirit and imparts gentle, warming layers of vanilla and spice.
